Summer Apricot Smoothie

Start the summer off right with an absolutely refreshing apricot smoothie!

It’s finally summertime, and that means summer fruits are finally in season, including apricots!

Summer is the time of year I most look forward to for its fresh fruits.

I love perusing the market for those special fruits I can only get this time of year.

It’s like coming out of the winter hibernation.

After a long winter dry spell, spent rotating a basic group of fruits that were in season plus a few frozen fruits, I’m looking forward to adding back some variety to my smoothie recipes.

That means adding in summer fruits like apricots, peaches, nectarines, and more to make amazing summer drinks.

This past week, apricots were on sale at Sprout’s Farmers Market.

I couldn’t resist picking some up and tossing them in my smoothie…and the results were delectable!

So let’s kick off the summer with a refreshing apricot smoothie…

Apricot Smoothie Recipe

3 apricots

1 banana

6 strawberries (organic is better)

1 to 2 handfuls of baby spinach

¼ cup water

1 tbsp chia seeds (optional)

1 cup ice


Cut the apricots in half and remove the pits.

Toss all of the fruit in the blender, and then add the water.

Blend until it forms a nice liquid.

At that point, go ahead and add the spinach (and optional chia seeds).

This way you get a much smoother consistency, and it’s easier to blend versus adding it all at once.

If you have a Vitamix or other high-powered blender you can probably add it all at once…but if you just have a normal blender, don’t think that you can’t join in on the green smoothie fun.

You just have to be patient and blend in phases rather than all at once.

Makes about 3 delicious cups :)

Why I Love This Apricot Smoothie

If I had to describe this smoothie in one word, what would it be?


That’s right, this smoothie tastes like pure refreshing summer in a glass.

I’m sure you’ll love it as much as I did.

Not only is it tasty as heck, but it also has an amazing energizing effect.

Just how energizing?

I made this first thing Monday morning, at 6 am, yes 6 am on a Monday morning.

I’m always tired in the mornings when I have to get up so early, but Mondays are the worst.

I’m basically a complete zombie.

After drinking just one cup of this delicious fresh spinach smoothie, I felt energized, renewed, full of life, and ready to start my day.

And after drinking all 3 cups, I couldn’t have felt better.

How’s that for a drink that’s also incredibly tasty, and good for you too?
